Hot Roast Beef sandwiches?

Ok, need to know how to make these. Last night I went to deli counter....bought a pound of roast beef. Then bought 4 cans of au jus gravy. Heated the gravy, then added the roast beef and warmed it up. But what happens is the roast beef turns like a gray color, and loses its flavor.

Help! How do you make your hot roast beef sandwiches??
