Homemade ice cream cake - is there something I should know?

I don't need a large one. I was planning on one carton of Breyer's cookies and cream ice cream and Oreo cookies.

Will it work with a spring form pan?

Is there something I should know that I might not be anticipating?

I don't know why, but I've never made one before. The Baskin Robbins near here charges $30 for their smallest cake! Yikes!

I would only suggest to use the best quality ice cream you can get locally.

Most ice cream now has so much air beaten into (like Edy's) that it doesn't freeze solid enough for an ice cream cake. The higher the fat/butterfat content the better the freeze.

Line the sides of your pan with plastic wrap, if you are going to take it out of the pan before serving, also line the bottom of the spring form pan separately.

Where's your chocolate fudge filling? Where's your whipped topping? Add peanuts?

so you're thinking about freezing the ice cream on the bottom and topping with cookies? or the opposite? or layering?

the possibilities are endless

I'm not a fan of Breyers or Edy's...if you have Blue bunny brand that's what I would use.

Also, a half of gallon of ice cream in a springform fan will yield you the height of a cheesecake if that's what you are looking for.

Here's what I did -

I bought one carton of Breyer's cookies and cream and let it soften.

In my food processor:

1 bag Oreo cookies

3 tbs. Smucker's hot fudge sauce

I cut a piece of parchment paper to cover the bottom of my Pyrex baking dish, with enough to hang over the sides so I can pull the cake out.

I lined the bottom of the pan with the Oreo mixture.

I spread in the ice cream and lined the top with the rest of the mixture.

I left a few Oreos for decoration and I also have white chocolate morsels.

It may not be the prettiest cake ever, but I think it will be yummy.

Tonight we're celebrating my mom and dad's 60th wedding anniversary!

The Breyers, Oreos and Smuckers was all on sale today. Total cost of the cake was $8 Smile

Congrats to your parents with 60 great years.

You know, in this generation, it would take a combination of 4-6 husbands or wife's to get to the 60 years....that's a great accomplishment.

QVC at one time, way back when sold a pan that you could bake a cake in it, then fill the middle and frost it. I got 2 of the pans. I use to make 7 Ice Cream Cakes for my students and co-workers. Each pan made 12 slices, so I needed 2 per class. The best cake mix to use was Duncan Hines Golden Butter recipe for the cake part. I'd bake the cakes, cool them and freeze them. Then I'd fill them with icecream put the layers together, and let them freeze overnight. The next day I'd frost them and pop them back in the freezer. I'd cut each of them into 12 slices and put some chocolate syrup on top and serve.

The kids loved when I made the Ice Cream Cakes.

The name of the pan was Culinique Specialty Food Molding System, I'd do a search and see if you can find one.

I would LOVE it if all my forum friends could come!

Dad can't go out much, so we're just having a quiet barbecue at their apartment. I bought them an electric grill for the patio. I made potato salad, southwestern corn and chicken kabobs. Last time I tried to make chicken on that grill I was surprised how long it took, so I actually browned and cooked the chicken in my skillet. I'll just have to heat them and let the veggies warm up.

The ice cream cake is an experiment. I'm sure it will taste good even if it turns out to be funky looking.

Thank you, Bird. I'll tell them that one of the ladies I watch AMS with on Saturday morning says, "Congratulations". When DH told them I get up at 4:45 to watch QVC on Saturday mornings, my mom thought that was crazy. I told her I had to watch it with my friends and she decided it was even crazier that my friends would be out and about at such an ungodly hour. {#emotions_dlg.lol}
