This AM. I'm making minestrone. I'm not using a recipe, I just checked a bunch of different recipes online and I'm winging it. It's a lot of prep work, but so far it smells great. I just added some parm , but I'm going to add the pasta separately as I serve it, so it  doesn't get mushy.  It's funny, minestrone is my favorite, but I've never made it. What is your favorite soup ?

Split pea with ham, an authentic smoked ham bone is a must for flavor.

I don't think I've ever tasted minestrone soup.

in my family, my vegetable beef soup is their favorite.

I don't use a recipe either. I have just perfected my own over the last 30+ years.

I use cubes of round steak (or chuck roast, whichever I happen to have), carrots, corn, sweet peas, onions, potatoes, speckled butterbeans, beef consume and tomato sauce.

after it simmers for hours, it's perfection.

it's beginning to get cooler here. almost that time of year to make it.

edited to add: I also put in a small ham hock or bone from a baked ham.

My favorite soap is the Potato Soup at J. B. Dawson's.

 

But I am afraid to try and make a Potato Soup. I look at all the potato soup recipes and I am not sure if it will be close to J. B. Dawson's.

 

And my husband does not eat leftovers. So either I would eat pretty much all myself or throw it out. But with the chilly weather already here. Guess I should give  few recipes a try.

My favorite soup is split pea with ham. I use a blend of both yellow and green split pea. I include carrots and onions and fresh herbs.

My favorite soup is Beef Barley, followed by Clam chowder....both New England and Manhattan. Nice cool day to make soup! I can eat it all year long.

Today, lentil soup with onions, celery, red bell peppers and chopped up left over pork shoulder bbq.  And a tablespoon or two of bbq sauce.  Maybe a splash of red wine vinegar or lemon or lime juice and hot sauce to taste of course.

Black bean with chicken stock and carrots, onions, garlic. The recipe calls for a cup of OJ at the end and using a blender to puree half the soup. Its a new recipe for me. Using the crock pot.

My favorite is Loaded Baked Potato Soup from The Machine Shed Restaurant Cookbook:

 

5 baked russet potatoes (around 2 lbs raw)

4 tbsp butter

1/2 cup flour

6 cups milk

2 tsp salt

1/4 tsp pepper

3/4 cup shredded sharp cheddar cheese

3 chopped scallions

1/3 cup sour cream

 

Bake potatoes and let cool about 20 minutes.  Cut in half and scoop out insides.

 

Whisk 1/4 cup flour and milk in bowl.

 

Melt butter in big pot.  Whisk in 1/4 cup flour until light brown, 2-3 minutes.  Slowly whisk milk mixture into roux in pot.  Stir until slightly thickened, 5-10 minutes. 

Stir in potatoes, salt, and pepper.  Break up any clumps with potato masher.

  

Whisk in cheese over low heat until melted.

 

Off heat stir in scallions and sour cream.
