I have used this recipe for enchilada sauce. It has chocolate in it.

I use flour tortillas
I grate monterey jack and cheddar cheese
use tender shredded beef, chicken or pork. I think chicken is best
use sliced canned green chilis (ortega) or roast, peel and slice them yourself
whole, pitted black olives
basically you dip tortilla quickly in a skillet with heated sauce
in center of tortilla place cheese from top to bottom, then a little meat top to bottom, a few slices green chil, 2 or 3 olives and roll up. Place in pan with about 1/4 inch sauce in it.
when all rolled (make sure ends are side down in pan.) drizzle sauce over enchiladas. Sprinkle with cheese, a few sliced olives. and thinly sliced green onion. Bake 30 to 45 mins at 350. Cheese and sauce needs to be bubbly.
