I have never had luck with pie crust, so I buy the ready made one in the box. But, I do know that the amount of moisture in the air does make a difference. That is why pie dough recipes don't give an exact measurement for the amount of water you add. You add just enough of the recommended amount to get the consistency you want. Also, I think if you leave it in the fridge overnight, you might want to let it sit out a little bit since it might be too cold.

Side question: What are those things that look like long cherry stems on the pizza?
It took this entire thread for me to realize that emoji is a pie. I thought it was chicken legs and couldn't make head nor tails out of it. Time to get my glasses checked.

@depglass : I was thinking the same things . So we will be seeing the eye doctor soon. But I had eye exam in May and change in prescription lens and still can't see.

I know that to a lot of people, making your own pie crust seems way too much of a pain. But to many others, doing that is a joy! Satisfying too.
Sure, I could easily order a pizza, but digging in to a homemade one is amazing!

I take no credit - I use Nancy Silverton's pizza dough recipe which is amazing!
That's her fennel sausage pizza, though I add roasted tomatoes to it.
