I'll add: The guy in the video uses a baking stone and a steam producing pan. I don't bother with that-I bake mine in a covered cast iron pot or a soaked clay baker. My way works fine and makes it a lot easier. I use organic flours. These homemade breads are great but they only last for a few days, (no preservatives!).

You use a food processor, and time. It makes a delicious loaf. The book mentioned is available on the Amazon used book sites. There are also a lot of gluten-free videos on YouTube.

lacey1, thank you. I did recently buy a Vitamix and am looking for more recipes to try. I did not get the grain container.

wagirl, yes I have checked out the cancer survivors thread. It is great support.

It really annoys me that everything I pick put has some form of soy as an ingredient. Hellmans mano has it as the first ingredient. It is in Skippy peanut butter and Kraft French Dressing. I just looked through my cabinet and found those so far. My daughter did find me an organic whole wheat bread at the grocery store the other day. Of course it will only last a few days but that is okay.

Did your oncologist tell you to avoid anything with soy in it?

I had the same type of bc as you and right after surgery I mentioned the soy in foods to my oncologist. She said that eaten in moderation, it's nothing to worry about. It's the soy in supplements that we should avoid.

Hellmans mayo, Skippy peanut butter and Kraft French Dressing are extremely processed "foods" and much, much worse for you than a small amount of soy in your bread. Stay away from processed foods and concentrate on 100% real food.

I would like to add. If someone has endured: a frightening diagnosis, surgery, chemo, hair loss, and many other 'changes'-this might not be the time to worry about MAJOR dietary changes. My appetite was poor, I became dehydrated. My Vitamix was my best friend. Organic green smoothies. I would add whatever I felt like, ice cream, peanut butter, chocolate chips, oatmeal-plus kale, apples, carrots, celery, ginger, turmeric, broccoli. Try to choose organic, healthy items but don't stress yourself running all over, trying to find this stuff.

I thought it was ironic that they were pumping me full of really toxic chemo agents, I was getting so dehydrated that I had hematuria, but yet-I was supposed to worry about soy and processed foods.

Take care of yourself, pick your battles. When you're stronger-you can make big changes.
