I worked in food service for 20 years. The prime rib is cooked in advance. And it is held under a warming light. They slice it when ordered. And I have seen them put it on the grill for warming purposes.it could have been leftover from the previous night. We would use ours as a prime rib sandwiches for lunch specials. And I have never eaten prime rib out.I cook prime rib for our Christmas eve dinner. At the cost we only have it on special occasions.

Ok now I want prime rib. We always make it at home on the smoker though.

The only time I've had prime rib it was served bleeding all over the plate. I couldn't eat it, but that's how the private club always cooked it--very rare.
