I steam my eggs for 13 min then immediately put them in an airtight container and put them in the fridge. The cool-down process while inside an airtight container will cause the shells to separate from the egg inside and peeling them is a snap. I learned this method from watching an episode of America's Test Kitchen on PBS. I never peel my eggs ahead of time because this method makes them so easy to peel.

I always have peeled hard boiled eggs in my fridge. I store them in zip lock bags with no problems.

Coincidentally, a new study out today has put eggs back on the "do not eat, they'll kill you" list. I will continue to eat eggs in moderation, as always.
I don't peel hard cooked eggs until I am going eat them.

Yes, indeed. I boil eggs by the half dozen. I cool them, peel them and keep them tightly covered in the fridge for up to a week.

I often boil a few to have on hand for busy weeks and quick breakfasts, but I never peel them until we eat them. We steam in a regular pot, or sometimes pressure cook them and never have trouble peeling them.

One advantage to keeping them in their shells until you're ready to eat/use them is that you can pencil the cooking date on them. Since the FDA says they keep up to a week, you'll know when to toss any that remain after 7 days.

I usually keep them in the shells but sometimes if I make deviled eggs & have leftover put them back in the fridge also have seen in the grocery store hard boiled & shelled eggs ready to go. I am going to try this but put a paper towel on the bottom of an air tight container think and fridge smells would effect them. I also know my family would not even think about shelling an egg seems that is my job.

According to FDA-hard boiled eggs should not be kept longer than 1 week. Look under "storage" in the below link.
