I ❤ veggies, and this looks so delish! A plank of grilled steelhead trout on the side, and oh my!😋

@SandySparkles Thanks!  I would have loved salmon, DH, not so much.  He puts an ounce of feta on his-REALLY!!!  I'm thinking, he could grill pork chops or something.  Left over salmon is fine with me!!!

One of my favorite things on earth is squash (especially yellow straightneck) sliced long and thin and grilled really quick on a hot griddle so it caramelizes!  OH good grief I love that!

 

Or eggplant!

Wow! That sounds like more feta than I would want with that. You are right, a sprinkle of parmesan would be perfect!😊

I roast summer squash with olive oil, sprinking of Mexican Sweet Corn seasoning from Rockerbox Spice Co and then top with a sprinkle of cheese.

@Sooner  add a few spring onions, to finish, add a little freshly grated aged Parmesian.......

i do that alot.. with brocoli,  brussell sprouts... different veggies.. its real good

@jannabelle1 Depends on the degree of "doneness" you prefer.  I did 40 min. Because I sprayed the al foil with  olive oil, I didn't turn them.  I did make sure the cut edge faced the heat.  The color comes from the Mrs. Dash.  Browning would have been mooshy!
