Greek Chicken
This chicken recipie is tasty, bright, delicious and “fragrant”.
Let’s start first with the ingredients you shall need:
a) 1 Lemon
b) 2 cups (about) of tomatoes (I think in US you call them cherry tomatoes, we call them grape tomatoes)
c) 1 jar (about six once) of Greek or Italian green olives. The very best is if you can find them at the olives from the olive bar at your grocery and please, make certain to remove the pit from them.
d) A dash of oregano (somewhere near a teaspoon full)
e) 1 piece of garlic minced/very well copped
f) Have a bottle of olive oil as you shall need: 1 tablespoon plus 2 teaspoons olive oil
g) 4 chicken of breast, skin removed, boneless and half
h) 4 teaspoonful of Greek seasoning, you find it at your grocery store and it’s called “Cavender's”

And the preparation of the dish:
Squeeze 1 lemon half, and reserve juice the other half for later.
Thinly slice other lemon half crosswise, and quarter each slice. Combine the quartered lemon slices, tomatoes, and next the ingredients: C, D and E into a bowl, add now the add the 2 teaspoons of olive oil, and combine them.
Sprinkle both sides of the chicken evenly with the Greek seasoning (Cavender’s).
Heat the remaining 1 tablespoon oil in a large ovenproof skillet over medium towards high heat. Once the skillet is hot and oil starts smoking, add the chicken, and cook for about 5 minutes on each side or until golden brown. Remove the chicken from pan now and place cover them with aluminum paper to keep them warm.
Add reserved lemon juice to pan, scraping the pan to loosen browned bits. Add the tomato mixture into the pan, and stir gently.
Place the warm chicken on top of the tomato mixture, and place the pan in the cooker (you call in in US oven). Bake at 400° for 20 to 25 minutes.
