Got some banana bread in the oven.

My husband hinted that the bananas were looking pretty ripe the other day.  I knew what was coming.  I have an easy and very good recipe for some.  So I did that.

 

Are you baking today, or crockpotting, or ?????

Too early here , but I probably will.Copied a recipe from Blue Jean Chef earlier, and it called for dusting the pan with raw sugar, after you greased it. I bought a box  from Amazon, it had 200 packets of raw sugar, my boo boo, anyways I made it and it was so good. Waiting for my bananas to get super ripe, or I'd be baking today.

I am going to try it on other cakes, just to use the sugar up.

Ready?

 

1 cup sugar

1/2 cup margarine

2 eggs

1 & 1/4 Cup  bananas (2 med.)

1 & 1/4 Cup all-purpose flour

1/2 tsp. salt

1 tsp. baking soda

 

Cream sugar and margarine together; add eggs and bananas, mixing well.  Stir in flour, salt and baking soda; blend thoroughly.  Pour into a greased and floured 9" x 5" loaf pan; bake at 350 degrees for one hour to one hour and 15 minutes until done.  Cool in pan for 15 minutes; remove to a wire rack and cool completely.  Serves 8. 

 

I just let it cool and cut in the pan.   I use Tara's loaf/bread size dish everytime.  It's always been a winner.  Enjoy.  Do the toothpick test for time.

I love banana bread.  No bananas here right now, but I decided to explore the depths of my pantry cabinet and found a boxed deluxe blueberry muffin mix.  I made them this morning and they are very good!

We've also rediscovered how yummy banana bread is! In addition to walnuts or pecans, I like to add about 1/4 cup mini semisweet chocolate chips. Here's my Mom's recipe.

 

Banana Bread

 

1/2 cup butter, softened

2/3 cup granulated sugar 

2 unbeaten eggs

1 3/4 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

2 or 3 ripe bananas, mashed (I mash them in a pie plate)

1/2 cup chopped walnuts (optional)

1/4 cup mini semisweet chocolate chips (optional)

 


*Preheat oven to 350. 
*Sift together the flour, baking powder, salt and baking soda. Set aside.

*Cream the butter, then add sugar gradually. Beat until,igniting and fluffy

*Add the eggs and mix until smooth.

*Add the dry ingredients alternately with the mashed bananas, stirring just enough to combine thoroughly.

*Fold in the nuts and chocolate chips.

*Pour into a greased 8"x4"x3" loaf pan.

*Bake for about 1 hour, testing for doneness before removing from the oven.

*Cool in the pan for 10 minutes, then remove to a cooling rack.

*Once the bread's completely cooled, slice with a serrated knife.

 

Lately, I've been making this in the Lock and Lock loaf pan and it come out great.

Made corned beef and cabbage in the crockpot a few days ago.

 

It was a compare and contrast to the corned beef we made in the pressure cooker a couple of weeks ago.

 

Hands down, the crockpot version won. More tender and juicy.
