Do you have some suggestions?  I'd love to hear them!  We now substitute green beans for chips or fries. And it surprises me how good they are.

 

Yes, fresh ones steamed for about 6 or 7 minutes--so they still have enough firmness to pick them up like fries--and served cold, warm or hot.  I put a touch of lemon juice or a good balsamic vinegar on them along with a little salt and pepper (I'm partial to white pepper) and we eat them like French fries!  And love them.

 

Sometimes we add Italian seasoning, Herbs de Provence, Greek, Cajun or any other seasoning we like.  Works for us!  

 

Do you have some favorites? I would love to hear them!

I love green beans.  They're great sauteed in a little olive oil and garlic 'til crisp/tender.  Sprinkle with parm/romano cheese.

I love green beans!

 

Tonight we are having grilled steak with corn on the cob.  The first of the season!

 

I also like:

Fresh from the garden tomato slices with slices of mozzarella cheese drizzled with balsamic vinegar.

 

Sliced kirby cucumbers with onion and mini tomatoes salad with white balsamic vinegar.

 

Sometimes I will buy bagged shredded slaw (there are different varieties) and add my own mayo, vinegar and a touch of sweetner.

 

Curious to hear what others suggest too!

While the only prep required is opening a can, one of my favorite summer vegetables are cold pickled beets.  I always have a can of them in the fridge. 

 

Goes good with a sandwich at lunch, or a side dish vegetable at dinner.  Tangy, refreshing, and makes a good "instant" vegetable.

Actually, I also like cold stewed tomatoes, and sometimes have a can of those in the fridge.   First time I tried them cold, I was surprised how good they are that way.  Another "instant" vegetable.

As with the green beans -- steamed asparagus spears. Warm or cold with the fixings you described. They are good grilled too.

Smashed Brussels Sprouts. Clean, steam until tender, then smash and quick fry (can top with Parm. cheese) until cripy. Enjoy!

I love pickled beets too. I eat sweet pickles and when they're gone I pour the juice over drained beets.  Very good and the juice from a large jar will pickle 2 cans of beets

We like squash, yellow long neck or green zucchini sliced salt & pepper (I like white pepper too)  couple little bits of butter, small amount of water in a glass bowl in microwave for about 3 minutes delicious.

We like tomatoes, cucumbers and red onion salad with balsamic vinegar and olive oil, steamed broccoli sauteed with butter, garlic and crushed red pepper, steamed green beans sauteed with butter, garlic, and mushrooms.
