Give me your best tips for delicious mashed potatoes (nothing fancy).

I'm making Julia Child's BOEUF BOURGUIGNON this Sunday and I want to accompany it with mashed potatoes. For the last few years, my mashies have been, shall we say, lackluster. I want some good, old fashioned mashed potatoes. Give me your hints and tips for delicious mashed potatoes.
