Freeze a baked fruit pie for later! For best results, first bake the pie and then place it uncovered in the freezer. When completely frozen, wrap the pie tightly or place in a plastic freezer bag and place back in the freezer. Frozen, baked fruit pies will keep up to 4 months.
Custard type pies do not freeze well.

When I bake pies for the freezer, I will only bake them for about half the time called for in the recipe, so if a pie is supposed to be baked for 40 minutes, I'll only bake it for 20 minutes or so. Then I cool it down and stick it in the freezer (unwwrapped). Once it's frozen, I'll take it out and wrap it well (and don't forget to label!).
When I want to bake a pie for dinner, I'll take it out of the freezer, unwrap it, and let it thaw for about an hour or so. Then I put foil over it and finish baking in a 375-degree oven for about 40 minutes or so, until it's warm. Remove the foil and bake another 5-10 minutes. Cool on a wire rack.
When I was younger and more ambitious, I would make a ton of fruit pies when the fruit came into season: cherries in the spring, followed by peach pies in summer, and apple pies during the fall season. My mom and my MIL would come to the house and we had a regular pie line worked out....I'd do the pie crusts while Mom and my MIL would peel the apples and put them together with the other pie ingredients. Then I'd fill the pie shells, either do the crumble topping or a two-crust, depending on what we wanted. Both of my moms would take pies home for their freezers, too.
I'd put something in the crock pot early in the morning and let it go all day. Then Dad and my FIL would drive down, we'd all have dinner together, do a quick clean-up, everybody would go home.....and I'd go to bed pooped! It was nothing to make 30 pies at a time. The freezer would be full of fruit pies. Throughout the year, I'd make other kinds of pie, too, maybe a lemon meringue or chocolate silk or peanut butter pie to mix things up a bit. Our family has always been big on pie, more so than cake. My MIL taught me everything about baking a good pie.
I rather miss those times. We had such fun doing that. We used to get together for gigantic cookie-baking sessions, too.
