Can they be kept in the fridge for a day of two before they are used, I just placed a large order for chicken and fish and if it arrives I will need to make space in my freezer. The only way I can do this is to use or unfreeze the packages of veggies I have in there

@I am still oxox I certainly think that would be fine. The packages will sweat, so put a dish under them. Also, you could just nuke them right away, and they would still be good for a number of days.

Do you have any picnic coolers that you could throw the veggies in with ice?
Otherwise I think the veggies would be fine in the refrigerator for a few days. You might want to drain the water from the vegetables from time to time so that they aren't soaking in water for days.

It may depend upon what kind of veggies you have, but I would use a cooler if you have one with some ice. I had a similar issue and made a big pot of vegetable soup, froze it in quart-sized freezer bags, and we are good to go while we are holed-up inside.

  @I am still oxox ,  when I have to do this to "make room" I cook the frozen things right away since they were meant to go from frozen straight to cooked. And I usually eat some of it that day.

 

After they cool I either refrigerate

 Or... I can often fit much of a bigger item back into the freezer if it's broken into smaller bags after its cooked.

 

If I do that I just warm the smaller portions as I need them. I cook, then freeze things in single portions all the time.

Put frozen veggies in a big bowl and dump a tray or 2 of ice cubes over them.

frozen vegetables are meant to go from freezer to be cooked immediately.   They will thaw in the refrigerator and will have a different texture if cooked thawed.   Either put them in a cooler or cook them then refrigerate or refreeze.
