I've made a great basic zucchini bread recipe only use cranberries and almonds, pecans or walnuts. YUM YUM!!!

Here is a recipe for a delicious addition to your Thanksgiving meal. I usually make it with fresh yams.

Cranberry Sweets

½ cup flour

½ cup light brown sugar

½ cup oatmeal (uncooked)

¼ to 1/3 cup butter (or oleo)

1 teas. cinnamon

Combine above ingredients and make into crumbs. Reserve ½ cup mixture for topping.

40 oz. can of yams (drained and cut into small pieces)

(OR 2 to 3 lbs. fresh cooked yams, cut small)

2 cups fresh cranberries

1 ½ cups miniature marshmallows

1/3 cup orange juice (optional)

1/3 chopped walnuts

Toss one cup crumb mixture with yams, cranberries and marshmallows. Place in casserole and top with remaining crumbs. Add 1/3 cup orange juice. Top with 1/3 cup chopped walnuts. Sprinkle with cinnamon.

Bake at 350 degrees for 35 minutes. Serve hot.

(This recipe is an excellent accompaniment to Thanksgiving, Christmas or Easter dinner, or any special occasion. Enjoy! It’s delicious!)

Last year I floated some cranberries in my centerpiece. Glass hurricanes, rocks, candle floating cranberries. You could add some greenery to them to, I used rosemary sprigs. Got lots of compliments.

I also used to make a sweet cranberry salad years ago as my son loved it. chop the berries as you like in food processor, mix with crushed pineapple (drained), walnuts, whip cream & sugar. The recipe calls for mini marshmallows, too.
