Fresh CRANBERRIES: What else can I make??

I have 2 big bags of fresh cranberries that are left over after all the cranberry sauces are made (including extra cranberry sauce for leftovers).

So what else do you make with fresh cranberries??

You can freeze the fresh cranberries right in the bags & save for later use....could be put to use in a month it will be Christmas.

Make a nice punch and use frozen berries in each glass.

i usually freeze them for use another time. the cranberry/raspberry/apple sauce that i make during the holidays is so delicious on top of vanilla ice cream.

they are also very pretty in a white cranberry martini. use a few of the frozen cranberries in the martini to keep it cold.

How about cranberry curd. I think it was December 2012 Cooking Light recipe. I love it stirred into yogurt. YUM

I'm so glad you asked! I made the following recipe last year and it was delicious. Almost like a cranberry pound cake and easy to make, beautiful to look at. I always have five bags of cranberries in the freezer for use throughout the year. I make cranberry relish all year round, although the relish freezes beautifully.

But how about.....

Chicken with Cranberry Sauce

2 cups fresh or frozen cranberries
3/4 cup water
1/3 cup sugar
6 boneless, skinless chicken breast halves (4 oz. each)
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. canola oil
1/4 cup maple syrup

In a small saucepan, combine the cranberries, water, and sugar. Cook over medium heat until berries pop, about 15 minutes.

Sprinkle chicken with salt and pepper. In a large nonstick skillet, cook chicken in oil over medium heat for 4-5 minutes on each side or until juices run clear. Stir the maple syrup into the cranberry mixture and serve with the chicken. Makes 6 servings.

Cranberry Pork Chops

1-1/2 cups sugar
1-3/4 cups water, divided
12 oz. pkg. cranberries, fresh or frozen
1/2 cup BBQ sauce (your favorite)
8 bone-in pork chops, 1/2 to 3/4 inch thick
Salt and pepper to taste
2 Tbsp. vegetable oil
2 Tbsp. cornstarch
1/4 cup cold water

In saucepan, combine sugar and 1-1/2 cups water. Cook and stir over medium heat until the sugar is dissolved. Bring to a boil; boil uncovered for 5 minutes. Add the cranberries; cook 5 minutes longer or until the berries pop. Skim off foam, if necessary. Stir in BBQ sauce and remaining water. Mix well and set aside.

Season chops with salt and pepper. In a large skillet over medium heat, brown chops on both sides in oil and drain. Pour cranberry sauce over chops. Cover and simmer for 45 minutes or until meat juices run clear. Remove chops and keep warm.

Combine cornstarch and cold water until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon over chops. Makes 8 servings.

Note: A 16-oz can of whole-berry cranberry sauce may be substituted for the sugar, cranberries and 1-1/2 cups water. Combine cranberry sauce with the BBQ sauce and 1/4 cup water and use as directed in recipe.

All good yummy ideas. Freezing the ones you do not use works well.
