To answer your question about freezing: I cook extra corn every late Summer, cut it from the cob, freeze it in one or two ear quantities, then enjoy fresh tasting Summer corn all Winter.

I pressure cook with 1 cup water and a little sugar, place corn on a rack for 1 minute.  I let corn cool and cut off the cob and vacuum seal and freeze.  I like to have enough corn for the winter.
