I have a recipe for Lemon Ricotta cookies. Do you think I could freeze them ? Thanks.

@hovis - I would imagine that you probably could—are you wondering about freezing the dough or the finished cookies?

I think you should be fine to freeze them—just follow the usual rules about getting as much air out of the container as possible and separating layers of cookies with parchment or wax paper if you're doing a lot so they won't stick together. And if your recipe calls for a powdered sugar coating or glaze, leave that off the cookies when you freeze them; after you thaw the cookies in the refrigerator later (a fun rhyme!), you can add that final touch as needed. I do this all the time -- I bake them, cool them and place in container w/parchment between layers.
I ice them when I'm going to serve them. They freeze great IMO!

Probably or you could freeze the dough and bake them later.
ETA: I just Googled "freezing lemon ricotta cookies" and you can definitely freeze them.
