I'm looking at this model, too. My DLC-7 is 30 years old. It's in excellent shape. Used daily for many years. Less often lately, as we are a 2-person household now. However, with growing grandchildren, it's getting regular use again. I've never seen one of these adjustable blades in use. Mine has blades from 1mm through 8mm for slices.
Amazon has nearly 600 reviews of this one.
6mm is 1/4 inch 1mm is just under 1/8 inch.
There is at least 1 YouTube segment
Disclosure: I worked for Cuisinart 1980-1986, so I have a nostalgic fondness for this brand.

I own it and it's a very nice machine. Having said that I've only sliced with it a few times in the years I've had it. I like my mandoline because I don't have to fit the food into the space of the feed tube.
In answer to your question, I google measurement conversions when I can't remember them. You just put in your measurement and then tell it to covert it.
