Thank you for the kind comments ... and @KingstonsMom the filling is a simple rasberry (seedless).  I just take a jar of seedless rasberry jam add a little water to thin -- let simmer until its thickened.  Cool and spread within a "frosting border" in the middle.

@homedecor1.  Would you please share your recipe for buttercream icing?  Your cake has made me hungry for a white cake with really good icing, my favorite combo.

My pleasure to share!  This is the recipe I've used since 2010 after I took cake decorating course.  (Also, sharing the easiest & delicious chocolate buttercream from Ina Garten...yum!)

 

I don't like the taste of shortening plus makes a "stiffer" icing for decorating, ie, roses, piping, etc.

 

I use all butter -- if I color I use gel coloring vs. liquid.  Of course, either works.

 

I love white cake too!  I doctor the Duncan Hines classic white mix w/1-2 tsp of pure vanilla.  Well, I add vanilla to all my box cake mixes.

 

Heres the recipe - (I use a stand mixer)

@homedecor1, thanks for the recipes! Quick question - since you mention adding a pinch of salt, I am guessing you use unsalted butter? If you used salted, would that work and not add extra salt, or is it better to use unsalted and add salt? Thanks!

Shhhh don't tell anyone but I use whatever butter I have😉

 

The pinch of salt was the original recipe -- sometimes I don't use it as I don't find this icing too sweet.  

 

Not sure maybe someone here can tell you what the salt does.  I think it cuts the sweetness.  🤷‍♀️🤷‍♀️

 

Actually, I prefer cream cheese frosting which I use quite a bit.

LOL - your secret is safe! I have both kinds in the freezer. I know salt has a purpose in baking, but since these aren't baked, I guess you are right - it is to cut the sweetness. I am looking forward to trying both of these. Buttercream is my favorite!!
