Rice Cooker Super Cheesy Polenta

Prep Time: 10 Minutes
Cook Time: 30 Minutes
Ready In: 40 Minutes
Servings: 4


"Cheesy garlic polenta can be made simply by cooking in the rice cooker. Serve as a side dish with your favorite protein."


INGREDIENTS:
2 tablespoons butter
1/2 onion, chopped
1 clove garlic, minced
1 cup chicken broth
1 cup milk
1/2 cup polenta
1/4 teaspoon salt, or more to taste
2 ounces shredded Cheddar cheese
2 ounces shredded Parmesan cheese
1/4 teaspoon freshly ground black
pepper


DIRECTIONS:

Place butter, onion, and garlic in rice cooker; close lid and turn on cooker. Cook until onion is soft and translucent, stirring occasionally, 10 to 15 minutes. Add chicken broth, milk, polenta, and salt. Cover and cook on full cycle, stirring occasionally, until polenta has absorbed the liquid, about 20 minutes. Add Cheddar cheese, Parmesan cheese, and black pepper; stir until cheese is melted.

Pasta in Rice Cooker *Adjust the amount of ingredients by half for the small rice cooker*

  • Prep Time: 5 mins
  • Total Time: 25 mins
Ingredients
  • 2 cups water or 2 cups broth, of choice
  • 1 cup homemade tomato sauce
  • 1/4 cup cooked ground beef (optional) or 1/4 cup bulk cooked hot sausage (optional)
  • 1/4 teaspoon salt
  • 1 teaspoon olive oil
  • 1/8 teaspoon dried oregano
  • 1/8 cup romano cheese
  • 2 cups uncooked rigatoni pasta or 2 cups penne
Directions
  1. Place ingredients in rice cooker in order given, and stir once. Add the salt depending on the saltiness of the cheese you are using, salt is an option.
  2. Close lid and flip the switch to on.
  3. When cooker turns off, open stir, and close again leave on warm for two or three minutes or until ready to serve.

Yes, I am hoping to cut the recipe to make it work in the smaller size.
