Oh, my goodness! I LOVE carrot cake! I may have to enjoy a piece today in observance of the occasion......

Just for the record, some of the best carrot cake I've ever eaten was at Cheesecake Factory. Not a cheesecake, but regular carrot cake.......so rich and moist! Just yummy!

My favorite as well. There's a restaurant in an Amish region of Northern Indiana that my DH and I go to several times a year. It's over a 2 hr. drive for us to get there and we always go there to eat when we're in town for a concert. I start thinking about that restaurant's fried chicken and carrot cake from the time we get in the car to drive there. It's the best store/restaurant version I've ever had. I have an incredible "secret recipe" for carrot cake from scratch, but I don't make it very often because I wouldn't be able to leave it alone.

I had a slice of carrot cake from an Amish dessert stand in Philadelphia's Reading Terminal over 20 years ago. I still remember the texture and flavors. It ruined me for all other carrot cakes!
