Domino's Drk brown sugar color

Just recently while baking items with Domino's drk brown sugar  for the holiday's , I noticed  that  a newer bag that was purchased by my husband was not the same color as  bags that I had bought previously .  The new bag was a light color  similiar to  light brown sugar but was in a drk sugar labeled bag  . Not sure if it's an anomaly , but I'm going to check   the next time I'm at the  grocery .

I usually have  bags of  drk brown sugar on hand  for  my favorite  desserts such as Pecan pie,  chocolate chip cookies and ginger bread .

I always buy dark brown.  Why not? I have never had a problem using it.

@skatting44 I noticed the same thing. I had thought I picked up a bag of light brown sugar by mistake.

I am guessing that Domino's is cutting back on the amount of molasses. The light brown sugar was really light.

Might just buy a jar of molasses and make my own. It only is the two ingredients.

If you go on line and google "why is light/dark brown sugar getting lighter," the Reddit/baking site has info/comments on it.  You are not imagining it.  Apparently, since Covid, brown sugar has changed and they are putting less molasses in it for some reason, which does affect the recipe.  Some speculate a supply chain issue or possibly trying to save money by using less molasses but no specific reason was given.

    when making  receipes  how much molasses do you add to the  lighter brown sugar without  messing up the  baking ratio of  wet to dry  say for the chocolate chip cookies.  The Pecan pie , I use drk Karo syrup  and the Ginger bread  receipe  has molasses  in it .

 I'm going to stock up on jars of molasses

@skatting44 thank you. I thought i was going too nostalgic and remembering wrong how dark the dark brown sugar used to be. That is crazy for the company to make that decision. They should just raise the price for gods sake.

To make In a pinch brown sugar at home  To ONE CUP of white granulated suger add either 1 Tablespoon molassess ( for light brown ) or 2 tablespoons ( for Dark brown )

Stir or pulse well before use.

Same here. I bought dark brown sugar for pecan pie and it was pretty light brown. I thought I picked up the light one by mistake.

What @candys mine said! We make our own brown sugar. It's so much more economical, and you can get exactly the intensity you prefer.

I have not tried making my own dark brown sugar. But I would try @candys mine recipe. 

My Dad always made the pecan pies for family gatherings. Evn when he had his stroke and lost the use of his right arm and hand. So this year we bought our pecan pies. They were made by Amish ladies. And they were dark brown. I suspect they made their own dark brown sugar. And used lots of molasses.

 

Forgot to look, is dark Karo syrup still dark, like it used to be?
