House Cat: I have one suggestion and one recipe for you.
Duke's clam chowder has a cult following worthy of a movie star. I don't have the recipe in front of me, but its readily available online.
Turner's Seafood restaurant won more chowder contests in Boston than you can count. Here is their recipe:
8 lbs clams (about 2 dozen if you're using cherrystones)
2 cloves garlic, peeled and crushed
1 stick butter
1 medium yellow onion, peeled and minced
1 rib celery, minced
1/2 tsp white pepper
1 tsp salt
1/2 tsp dried thyme
1/2 cup flour
5-1/2 cups clam nectar (after you steam the clams, strain the juice and make up the difference with whole milk)
1 large potato, cut in 3/4 inch dice
1 pint heavy cream
1)Wash the clams and steam in a 12 qt stock pot. Reserve the broth. Remove the clams from their shells, chop coarsely, and set both aside.
2)IN the same pan sauté the garlic in the butter for about 3 minutes.
3)Add the next six ingredients and sauté until the onion is clear. Add the flour to make a roux, stirring constantly over low heat for about 5 minutes. DONT BROWN.
4)Add the clam nectar (and milk if used) and stir vigorously to avoid lumps. Simmer for ten minutes. It will be thick so don't allow it to burn.
5)Add potatoes and cook until tender. Add back the cream and clams, bring back to a boil, correct seasonings if necessary, and serve.

Google "JFK favorite chowder" recipes. I believe one is from the Kennedy Library. With chowder, the simpler the better! I wish I had some!

I settled on the JFK recipe. It was the best soup I've ever eaten in my entire life. I might have said that before, but this time I mean it! Wow!

I'm glad you liked it! To me, it has the balance of rich/not too rich. Also for those as old as me it brings back memories! I think I need some of it soon!
