I use 5 kinds of oil: EVOO, butter, ghee, coconut oil, and avocado oil.  I often use avocado oil for all kinds of things.  It works great in the muffins and baked goods I make.  Sometimes if a recipe calls for melted coconut oil and I don't have time to do that I just use avocado oil and it works great.  It has a high smoke factor so it's good for high heat cooking.  I save my EVOO for mostly salad dressings and things where the oil doesn't have to be heated.  For those things I use mostly coconut oil, avocado oil, and ghee.
