I always take the frame of chicken or a turkey and make broth. It's delicious. I put the frame as is in pot of water breaking up frame so it is covered with water. Bring to a boil and then simmer for an hour. Then I strain it so no bones are in my broth. I firmly believe the flavor of any soup or sauce will be better with bones. I also make my macaroni sauce with beef or pork bones along with my other meats. . It changes the taste for the better. Very inexpensive to buy these in the supermarket. Not much meat on them but everybody in my family likes to munch on them as well.

I think it's an Asian thing (maybe Korean?) They make a lot of soups with bones. I think it extracts calcium...
