@Effie54 Sure! Here you are, my favorite easy dinner! Courtesy of The Girl Who Ate Everything!

  • 1 lb ground beef, (nutrition calculated with 85/15 beef)
  • 1 teaspoon minced garlic
  • 14 ounces shredded cabbage or coleslaw mix
  • 1/4 cup low-sodium soy sauce, or coconut aminos (see note)
  • 1 teaspoon ground ginger
  • 2 teaspoons sriracha
  • 1 whole egg
  • 1 tablespoon sesame oil
  • 2 tablespoons sliced green onions

Equipment

large skillet (I love this nontoxic one from GreenPan!)
meat chopper (makes breaking up the beef easier)

Instructions

In a large skillet, brown the pork or beef until no longer pink. Add the garlic and sautee for 30 seconds. Add the cabbage/coleslaw, soy sauce, ginger, and sautee until desired tenderness. You can add a little water if you need more liquid to sautee the coleslaw down.

  • Make a well in the center of the skillet and add the egg. Scramble until done over low heat.
  • Stir in sriracha. Drizzle with sesame oil and sprinkle with green onions. Add additional soy sauce and sriracha if desired.
Notes

This recipe yields 4 servings. Divide the pan in 4 to figure out serving or weigh it and divide by 4. Weight will vary for each person that makes it depending on brand or type of meat.

@Effie54   - The Sesame Oil is critical to the flavor, the Siracha is optional!

I hope you enjoy it!

GREAT recipe @ @We rescue cats ! Thank you for that.

I am adding this to my coleslaw mix staple!!!

Im single so i get out of the habit of cooking.

Another way i use a bag of coleslaw mix and a pound of ground beef for a no nonsense meal is to

saute the meat.in a large skillet

Add onion or onion powder or minced onion or rdied onion

garlic powder, garlic minced etc. to taste

Add any herbs you like fresh or dried ( i use dried italian season herb mix)

Add the shredded coleslaw mix

Add a jar of your favorite spaghetti sauce

Add 1/4 to 1/2 cup of water to the jar, shake and rinse out into the skillet.

Toss

Let it simmer about 20 min

Serve in bowls add shredded mozzerella, asiago, italian blend whaever you like.

I can eat this for days until its gone. I just love it and zero gulit as there is no pasta. I love pasta and dont have a lot of control

Re: Do You have "Go To" Meals?

I buy whole NY strips and have them cut into 3/4 inch steaks.  I always have them in my freezer.

If I don't feel like cooking, I thaw one out, make a baked potato and a veggie.  I always have a big container of green salad made ahead of time.

I cut veggies for the salad bowl about twice a week, so a salad is always ready...just add dressing as needed.

When the weather cooperates, I like to cook outside on the grill.  Grilled meats and veggies...yum

I always have pasta and sauce on hand. Also cheese for a quick but filling grilled cheese. Tuna when I don't feel like cooking at all! Smiley Very Happy

Re: Do You have "Go To" Meals?

When I have zero time I just have a bowl of rice checks with oat milk, I add a scoop of vanilla protein powder to the oat milk to get my protein in as well. Doesn't get more simple than that LOL  yes, I really am that lazy when I have no time to cook! lol

Re: Do You have "Go To" Meals?

Grilled Cheese sandwich and Tomato Soup has always been a favorite staple. Nothing fussy about it and it's so comforting.

I always have salad made up in the fridge. Plus, I cook up several chicken breasts and ground beef to have on hand to add to the salad fixings.😊
