Living alone now I don't know how to cook for 1 so I'm happy with grill cheese and tomato soup, egg or tuna salad.

 

Or a chopped antipasto salad.

Food is way too important to me, so I do meal plans. I've avoided pizza for three months, but when I have no desire to cook, I'll either bake one, or we'll go out for pizza.

@We rescue cats I can't believe it! Tonight for dinner we had "Inside Out Egg Roll". we had left over cabbage from our corned beef and cabbge meal. That is why I made it.

 

My recipe is basically the same as yours.

 

Ingredients

    • 1 ½ lbs. ground beef
    • 1 large onion diced
    • 1 bag of cabbage coleslaw mix
    • 1 Tbsp. minced garlic
    • 1 Tbsp. minced ginger
    • 1 Tbsp. Chili paste
  • 2 Tbsp. Lime juice
  • 1 Tbsp. fish sauce
  • ½ tsp. black pepper
  • 1 tsp. sesame oil
  • ¼ cup soy sauce
  • Fresh basil or cilantro as garnish

Instructions

 
  • In a large skillet or wok, add the ground beef and onion, and cook until crumbled and cooked through approximately 5-6 min.
      • Do not drain.
      • In a small bowl add the garlic, ginger, pepper, chili paste, lime juice, fish sauce, sesame oil, and soy sauce, and stir to combine.
     
    • Add the coleslaw mix to ground meat then cook and stir over medium-high heat for 3-4 minutes.
  • Add Thai sauce mixture then stir well.
  • Reduce heat to medium and continue cooking for 5-10 minutes or until cabbage is tender.
  • Serve it with rice if needed and garnish with fresh basil, chopped green onions, or cilantro

I don't really have a problem with knowing what to make.  I usually plan our lunches a couple of weeks at a time.  The freezer always has plenty of steaks, pork chops, ground beef, ground chicken, salmon, boneless skinless chicken breasts, steakburgers, bacon, frozen veggies, frozen berries.   I guess, if I had to pick something, I'd say bacon and Mexican omelets with the typical toppings and a side veggie, maybe some berries too.

Just made tonight scrambled eggs with veggies can drop in a tortilla, salsa & Alexia tater tots. Also submarine sandwiches (keep sub buns in freezer), wrap with cheese & veggies, grilled cheese, boxed mac & cheese, pasta & jarred sauce (Has anyone tried Rao's?  Expensive but yummy).  Baked potato with melted cheese topped with cut up tomatoes & green onions & salsa & lite Ranch for dips.

That is my all time favorite sandwich!  Finally found great sourdough here in Denver and it has been heaven making this sandwich with it.

We have our big meal at noon so in the evenings we'll eat leftovers from lunch.

 

If we don't have leftovers, I'll fix breakfast or have a sandwich. Maybe a frozen meat sauce lasagna or a frozen chicken pot pie.

I eat more "What is on Hand" meals.

 

Always keep a serving of meat defrosted in the refrigerator.  Then add veggies for a salad bowl, ranging all over the map.  And a selection of fruit, again varying.  

My shopping list is built around what looks fresh.  Pickings are a little slim right now.
