Do You have "Go To" Meals?

I am referring to things I make when I have no idea what to make. Things we like but are not 'fussy'. My version of Goulosh is on the menu tonight. Macaroni, tomatoes, mushrooms, ground meat, peppers, onions, and whatever I want to toss in the pot! My other favorite is Egg Roll in a Bowl, I love that and make it regularly.

Baked maple sweet potatoes with chopped pecans, baked chicken with panko and fresh coconut crumbs.

Living alone,  if I don't feel like eating or cooking, I just have a snack; crackers & cheese, pop corn, yogurt, a few air fried pot sticker, a protein shake, whatever I have on hand.

@Effie54 Sure! Here you are, my favorite easy dinner! Courtesy of The Girl Who Ate Everything!

  • 1 lb ground beef, (nutrition calculated with 85/15 beef)
  • 1 teaspoon minced garlic
  • 14 ounces shredded cabbage or coleslaw mix
  • 1/4 cup low-sodium soy sauce, or coconut aminos (see note)
  • 1 teaspoon ground ginger
  • 2 teaspoons sriracha
  • 1 whole egg
  • 1 tablespoon sesame oil
  • 2 tablespoons sliced green onions

Equipment

large skillet (I love this nontoxic one from GreenPan!)
meat chopper (makes breaking up the beef easier)

Instructions

In a large skillet, brown the pork or beef until no longer pink. Add the garlic and sautee for 30 seconds. Add the cabbage/coleslaw, soy sauce, ginger, and sautee until desired tenderness. You can add a little water if you need more liquid to sautee the coleslaw down.

  • Make a well in the center of the skillet and add the egg. Scramble until done over low heat.
  • Stir in sriracha. Drizzle with sesame oil and sprinkle with green onions. Add additional soy sauce and sriracha if desired.

This recipe yields 4 servings. Divide the pan in 4 to figure out serving or weigh it and divide by 4. Weight will vary for each person that makes it depending on brand or type of meat.

If I don't have spaghetti sauce in the freezer I may do turkey burgers with frozen sweet potato fries and whatever green vegetable I can find or spaghetti with garlic (olive oil, lots of garlic, grated lemon rind, red pepper flakes) or a version the the goulash you describe or shrimp either quickly roasted on a sheet pan with vegetables (winter) or sauteed with vegetables and either rice or pasta (summer).

I always have frozen chicken tenders or frozen salmon fillets for when I don't have anything else planned its usually one of those.

Thats what I do when I am alone also, can't stand cooking for just me.
