I try to serve vegetables with every meal, whether a salad or side dish. We also like main dishes that contain vegetables, like stir-fries, and soups (vegetable soup, minestrone, etc.).
About once a week we have "salad for dinner" and that helps us stock up on veggies (although DH prefers the salads that have chicken or meat in them ha ha).
I also love fruit, and we often have fruit salad, a fruit dessert, or just cut up fruit with dinner.

I don't eat green vegetables. I can't stand them. I do eat a wide range of other vegetables. A person can be perfectly healthy without eating green vegetables.

I add spinach, onions, peppers mushrooms and tomatoes in my omelets or withscrambled eggs and sometimes asparagus if I have some.
Carrot or zucchini muffins are good. Avocado toast, pan potatoes with veggies work too. Sometimes I make breakfast casseroles with eggs, cheese, sausage, potatoes and veggies and we can eat it all week.

I make that breakfast casserole too, I omit the sausage because I don't eat much meat. The others have sausge on the side. We have it for breakfast and for lunch....until it's gone.

Yes! Always a green veg and a big salad served with supper. Other color veg too. DH doesn't complain.

We eat a wide variety of veggies--of all colors. My husband cooks a lot of meals, and he always includes vegetables too.
We have pretty much given up on salads because of issues with produce. But we always have a wide variety of fruits and vegetables. We do a lot of fresh collards, kale and such.

When I had kids and a husband living with me, there was a vegetable served with each dinner.
Now that I live alone, I don't always do that.

Green veggies are a powerhouse of vitamins and minerals. Often, nature shows us what is good for us. Look at bright colors of berries which are powerful antioxidants.
My dh actually likes all veggies more than I do. He snacks all through the day- just grazes on baby carrots, sugar snap peas and usually some junk. But more veggies than anything.
