If I am serving it as a salad I do like to add fresh red grapes cut in half to it. Fresh pitted cherries are also delicious. Sprinkle it with toasted almonds.

I bought the 8 (?) pack of the big cans of Costco chicken at the beginning of the Pandemic, and just used the last of the cans this last weekend.
I use it when I'm time crunched, and except for a pretty high sodium content, it works fine in soups, casseroles, and actually, chicken salad, but I cut ALL the sodium in other fixings when I use it.
