Here's the chart I use for the big batches.  Adjust / Pro rate  based on how much San Marzano plum tomatoes used.

 

Tomato Oz.   Paste Oz.  Peppercorns    Garlic    Sugar

Lots Parsley Flakes.  Less but even amt: Basil & Oregano

 

 

Sauce can be used for pizza topping, soup, dipping sauce.

@SandySparkles  I agree that it's rare. He could cook anything and had a huge garden up until a few years before he passed away. He was also very talented at building, wood work etc. My husband didn't inherit those talents lol which is fine. It's just funny how that works out.

Both of my grandmothers canned and preserved every possible fruit and vegetable. That's how you got your family through the winter. 

 

One grandmother lived on a farm. They had a canning shed out near the fields which was nothing except shelf after shelf of canned vegetables, fruits and other preserves. They had another building with dried peppers and other dried produce hanging from the rafters. 

 

My more urban grandmother had a "root cellar" that had been dug and lined with stones by her father. That's where she stored pickles, relishes, jellies. 

 

My mother canned a bit as a newlywed with a garden, but gave it up when she went to work full-time. 

 

I've always made jellies and pickles ever since I was a teen. But I take the easy way out and freeze extra produce from our garden or the local farmers. 

 

There's something so satisfying about preserving the bounty of the earth for the cold months.

Both of my grandma's canned surplus garden produce.  My mom "put up" green beans, corn, cherries, lime pickles and green tomato relish.  I started canning when I was about 22, and had a wonderful, experienced canner who lived next door and helped me learn.  I pretty much fed our family of 6 out of our backyard garden and the fruits we were given or found in the countryside.  After moving "to town", I have given up my garden spot and am the only one who eats regularly at my house (husband passed away and kids all have homes/families of their own).  I continue to can jellies & jams, pickles, relish, tomato sauce and picante sauce for my own use and gifts.  I dearly love seeing those beautiful jars lined up on my shelves, and as a dear canning friend once told me: "Everything good starts with a quart of tomatoes!"

@AuntMame Welcome!🥰 Reading your post gave me such COMFORTING memories of my dear grandmother and mother, and the tireless work they put in while canning!❤️They worked in a HOT kitchen sometimes, and never once complained!😊I TRULYregret not getting their recipes; though I have canned jelly with recipes from a book!😑

 

I am IMPRESSED at you having canned since you were a teen, and continuing that tradition!
