for Icebox Bread & Butter Pickles sounds really good. I am waiting for my plants to produce . It seems that most summers I have a few of the ingredients but cannot find a recipe. This year I am going to try to have everything ready so I will not waste my bounty and hard work.

 

does any one know how many cups of 'sliced 1/4 " rounds 3lbs. of cukes would translate into?

According to the Old Farmers Almanac: Cucumbers: 1 pound (2 medium) = 4 Cups Sliced.   They have lots of other pound of veggies measurements here is the link

I don't know if this will help or not, but my grandmas Icebox Pickle recipe just goes by amount of cucumbers not cups of.

 

12 Pickling Cucumbers sliced 

1 Large sweet onion sliced and cut to your preference

Place the sliced cucumbers and onions in a large bowl, sprinkle with 4 Tablespoons of salt, let sit for 2 hours.  Place in a large collander and rinse 2 times with cold water.

Set aside to drain.  In a saucepan combine 2 1/4 - 2 1/2 Cups Sugar and 2 cups vinegar (apple cider was the favorite, but use your favorite).  Bring to almost a boil, making sure the sugar has dissolved.  Remove from heat, let cool.  Place the cucumbers and onions in jars or large enough container to hold everything, pour cooled mixture over the top, place in refrigerator.  Enjoy once they are cold.

After not finding any response I googled and found that link. It is helpful.

 

ty for your grandma's recipe , it sounds delicious.

 

I hope I have a good crop this year DH & I love refrigerator pickles .

Usually, recipes containing vinegar come out great with non sugar sweeteners.

To me, Grandma's Pickles sound fabulous, and I will try them with stevia (Truvia) as soon as I can get into a kitchen!
