I use half cottage cheese w/chives and half ricotta cheese and mix together when I make baked ziti or lasagna, my sister in law makes it that way.

I love it now and loved it as a kid. I prefer small curd/whole milk. Favorite most purchased brand is the house brand by Meijer. I like Michigan brand ,but it is about twice as much.I like it with fruit=pineapple, peaches or pears, with raisins. DH puts so much pepper on it and makes it barely reconizable!--to each thier own. When I want savory- I add capers.
I also add it to scrambled eggs for extra protien sometimes. I have a recipe that I got with my very first crock pot (100 years ago) with spinach and cheddar cheese that we like and is popular at pot lucks.

I don't think there's a change in taste. Large curd has bigger chunks than small curd. I don't buy it as much as I used to but pineapple is my fave.

I'm going grocery shopping today and I think I'm going to buy some cottage cheese after reading this thread. I'd sort of forgotten about cottage cheese.

I love the small curd drizzled with a little bit of honey.

@Tinkrbl44 I detest, loathe and hate that stuff, to answer the question!

I usually buy Daisy which only comes in plain at my grocer. For flavored, it's Hood, usually pineapple.
Never tried large curd so don't know the difference.
Often, I'll eat it right out of the container with saltines - it's kinda a sweet and salty taste. Sometimes I add some to my furbaby's kibble along with sauteed hot dog slices - he really likes that!
Enjoyed reading this thread. Got a lot of ideas - gonna try adding it to pancakes and scrambled eggs. Yum, getting hungry.

@Tinkrbl44@Citrine1
I also love cottage cheese. You are correct @Citrinel,
small or large curd is not about the taste, they are the same.
The difference is in the size of the curd. I like small curd best.
Taste differences are found in the amount of milk fat.
I prefer the 4% milk fat and to me it has the best taste.
There is a slight taste difference in the low fat cottage cheese and that is what I ate for years. But, now many doctors are saying that whole fat dairy is better for you and I have changed to the 4%. Many doctors are saying that saturated fats
do not raise our cholesterol and are what our brain needs, not low fat. It is the processed seed oils, vegetable oils and trans fats that are bad for us. I only use cold pressed Greek olive oil now.
Then there is the low or no sodium cottage cheese. Trying to cut sodium, since I have high blood pressure, I did
try that, but it tastes like chalk.
I like to add my own fruit or berries to cottage cheese.
I add pineapple or peaches. Sometimes, I make a fruit plate for lunch, with assorted fruits and berries and will add a scoop of cottage cheese in the center.
Other times, I have a small glass of V-8 ( I get low sodium) along with cottage cheese and crackers for lunch.
I like ak-mak sesame crackers ( they are not salted) with cottage cheese. Sometimes I use Toasteds Harvest Wheat crackers.
When my children were little, I would mix cottage cheese with chopped marachino cherries and fill a pear half for them and they enjoyed that.
Most days, my lunch consists of cottage cheese or yogurt ( I recently switched to whole milk yogurt). I put fresh berries and a tiny bit of honey in the yogurt. I like plain Greek yogurt best.

@Carolina925 wrote:I prefer large curd but it's impossible to find here. I apparently am in the minority again but I find it to be drier than the small curd. I like it on lettuce and drizzled with French dressing. I'm always looking for ways to get more protein into my diet and need to start getting this again. I also like it on top of anything with ground beef and tomatoes. I grew up eating it with canned fruit: pineapple, pears, peaches, etc.
Since I started this thread and have been reading the comments, I now suspect that the differences between large and small curd may vary by brand.
Unless a brand name is on sale, I usually buy Kroger or Signature generic brands of cottage cheese. I find both to be very good, although I may try someone's rec and buy the Walmart generic.
