Cutting Bar Cookies and Fudge

[ Edited ]

Years ago, fed up with corners of bar cookies being hard to get out and wanting nicer pieces, I started lining those casseroles with about 8 inches of foil coming out the sides.

When the item has set up, I have a handle to grip and lift to a cutting board in front or behind.

Rock a knife baack and forth to quickly cut the block.

Whoopie!!!!!

My table covered with cloroxed towels to protect the wood.

There is an easier way; Amazon has a no edge brownie pan, which makes it very easy to get uniform pieces.

I use an extremely thin, flexible stainless spatula which I can bend to get into any corner.

I use this; more narrow so you can control the small bars closely.

I use the smallest and the next one.

@ECBG  This is the recommendation on all of my keto pan type baked goods.  I line with either parchment paper or foil.

Like @JeanLouiseFinch I use parchment paper. For brownies or bars, I just flip over after item is cooled, then ice and/or cut I to sizes I want. I love parchment paper because it's inexpensive as well as being recyclable w/ yard waste.

I started using the foil method for my fudge back in 1985 may son was 2 at the time.  My DDIL texted Sunday she put a piece of my fudge into each of my grandchildren's lunches last week, my GD calls it brownie butter.Woman LOL

@cindyNC

When I get the baking done, I show you.  This table was great for breakfast and lunch for our sons growing up.  I don't think it's comfortable for an adult.

We have always eaten in the dining room.

I'll make the table scape on Christmas day.
