The flat cut is usually more expensive, so you can pretty much surmise that it's the better cut. Also, I prefer the gray corned beef as opposed to the red. The red is much saltier.

I look for a flatter piece. I roasted it in foil once, didn't like it nearly as much as boiling with the flavor packet.

I had to look that up. I've never heard of gray corned beef, interesting.

Both were the same price here.

No it does not affect the taste at all.

It removes the excess salt which is a good thing, and it also stops all that nasty stuff which floats to the top....and that is a good thing too!

Some people love the salty taste, some do not and some cannot have the additional salt and do everything to try and get some salt out.

Depends on ones health and personal preferences.

Sometimes one craves salt, and other times not so much.

We are a complex group us humans, and our tastes seem to change and differ vastly, but in the end we each really enjoy what we want, and that is all that matters.
