Sounds like a fantastic lunch. If you like the veggies, then cook them together. Don't worry about if they "go". All veggies go together. Granted some can be more pungent than others, like onions, but adjusting the quantity of them is all that is needed. A bit of this, a bit of that equals YUM!

They will play very well together! The zucchini has a mild flavor that doesn't clash with anything. Your dish sounds great! Good way to use up all that extra zucching!

I would give it a try and see if you like it. That is how a lot of great dishes are created by just experimenting. I did yellow squash, onion, potatoes and small bell peppers together the other day and it was delicious. I would cook the zucchini first and then add the spinach last as it cooks down really fast.

I would have no hesitation to cook spinach and zucchini together, but I would use olive oil instead of butter.
