I have recently eliminated all artificial sweeteners. I had been getting terrible headaches, and now I haven't had a headache since I got that stuff out of my system. Several health professionals, including MDs and nutritionists, have told me that artificial foods are not the healthy choice. At least your body knows what to do with sugar, butter, etc. I have begun to bake with organic coconut palm sugar. It is lower on the glycemic index than regular sugar, and also I reduce the amount of sugar called for in a recipe. You get used to the lower sweetness, it doesn't take long.

I think the issue of artificial sweeteners is something everybody really needs to research. For so long, we welcomed them-used them in our foods- drank them up-and the latest information being conveyed is that they are really,really, really bad-even stevia is coming under the gun.....who knows? I don't know and I am not saying I am an expert, but this is an issue worth paying attention to.

I'm afraid that I don't have any cookbook suggestions that are specific to Splenda, but I did want to say that I use it without any issues myself. I wanted to add, that I only use the liquid form of it without any additional additives, since those are what raise my blood sugar.

The granular forms contain things like maltodextrin, dextrose, dextrin, and other bulking agents that are hidden sugars. Those raise blood sugar even though they aren't listed on the label as sugar. I sometimes wonder how many people are reacting to the additives rather than the splenda. I know I was until I switched to the liquid form. I DO believe that some people might be sensitive to splenda, I just don't think it is as evil for EVERYONE as it's being made out to be.

Same goes for vilifying ALL artificial sweeteners saying that sugar is better. that might be true for a generally healthy person. But if you are diabetic like me, sugar is NOT better than an artificial sweetener. I'd rather go with the evil splenda than never having anything sweet. I use stevia for a lot of things, but I prefer splenda for others.
