Commercial mayo - safe at room temp

Mark Charles (who I like to watch) just said that mayonnaise at room temp is not safe. David did not dispute or clarify this statement Yes, if it is homemade mayo, it needs to be kept cold. No, if it is commercial mayonnaise, as commercial mayo is very safe outside the fridge for a long time.  And most people do not make homemade mayo for their potato or picnic salad. Perpetuating old myths should not be a part of trying to sell a thermo container on TV when there are plenty of real reasons to keep food very hot or very cold.

Please don't give advice that may pose danger to people's health. 

 

The USDA recommends refrigeration for OPENED mayo.

 

The mayo itself is supposed to not spoil if left unrefrigerated after opening ONLY IF NO BACTERIA IS INTRODUCED INTO IT. 

 

That is rather hard to guarantee when cooking. Just some food on the knife or spoon you use  or from other foods while preparing could enter the jar and then grow and be very dangerous. 

 

Refrigeration of mayo is just a good safeguard. It also protects the flavor, which will degrade quickly after opening, if not in the fridge.

I worked for a gastroenterologist that said mayo becomes unsafe after 20 minutes at room temp and quicker in the hot outdoors.  I dont consider any dairy product safe to consume after sitting out longer than 20 minutes.

It's not the mayo that goes bad but the items it is mixed with and how it was handled in preparation of the dish.

I always refrigerate commercial mayonnaise once opened.  I won't eat food made with mayo that's been kept at room temperature for a long period.  Not taking the risk.

Then consider the fact that mayo is combined with eggs in the potato salad.  I have a friend that refused to eat my picnic contribution even though I had the bowl packed in ice inside the cooler.  A bit reactionary, perhaps, but she got me thinking.

OP is totally WRONG!  I was trained by Colorado State University in Food Safety and you ALWAYS refrigerate mayo after opening!  Talk about making folks sick!  Terrible advice. Please refrain from posting if you don't know the facts.

@brandiwine   I got food poisoning from mayo or that's what the doctor said caused it when I was a teenager. I thought I was dying. I'm a fanatic when it comes to getting things back in the fridge. If I think it's been sitting out too long I will not eat it. My MIL is bad about leaving things out after a family dinner.

@Nightowlz I think that when it comes to mayo, when it doubt, toss it out. I always keep mine in the fridge. But the other day I noticed that my almost new quart size jar looked like the cap hadn't been completely tightened when I put it back in the fridge.  Out it went!

Any food left out too long can certainly be a danger!  It just doesn't take that long to put food away after a meal.  At holidays we finish, get up, put food away, and then have dessert.  No big deal, but the leftovers are safe!
