My pound cake recipe has been in the family for generations. It goes in a cold oven at low heat for 1 1/2 hrs. It is very good but I do not make it on a warm day. The crust is fabulous.

There are very few things I can think of, from memory, that I've started in a cold oven. However, just recently I was looking at Angel Food Cake recipes and many of them say to start in a cold oven.

Pastries (including most cakes), pizzas, and other items requiring a high initial heat to set a product must be started in a hot oven for best results; utilizing a cold oven will result in inferior quality.

Things such as casseroles, dishes being reheated, many meats, and recipes developed for cold oven baking are fine to start in cold ovens.

Cold oven pound cake was developed electric range manufacturers when they first came on the market. T/he manufacturers used it as a marketing tool, selling customers on the idea that one could make a cake starting in a cold oven, saving fuel, electricity, money, and time over other (then) more common stove types such as gas or kerosene.

People used to do this years ago with a whole turkey in the oven all night. Turkeys aren't processed the same now. It's highly dangerous because of deadly bacteria. That's why you have to take them off the bone after cooking to refrigerate. Now we have cooking bags which shortens the time.

I did not know this. Fortunately I have taken it off the bone anyway, but to save space in the frig.
