I need some ideas and inspirations! I came across a bottle of mixed coconut and almond milk, and it's unsweetened. Seemed like a good thing when I bought it, but now it's in my fridge, I'm kinda scared of it!

 

The thing is, I don't know what it will do and what it won't. I don't think I would want to drink it by the glass, and I don't eat cereal, so what else is it good for? Can I cook with it? Can it go in soup or in sauces? If so, how would I thicken it? Can I use it to make pancakes or waffles or things like that? Omelets? Can I freeze it to use later? 

 

I guess I could make cocoa with it or put a bit in coffee, but at that rate, the bottle will last all year. So do any of you cooks have experience with it? Thanks!

I drink it and it's delicious.   I like it much better than dairy milk.   You can use it for anything you'd use dairy milk for except people say it doesn't work well with pudding mixes.   I mostly use it for making oatmeal but I drink it too.   Pour some in a glass and try it.   It just faintly tastes like almonds and coconut.

My SO picked it up by mistake for me thinking it was original almond milk and I think it's way too sweet. Didn't like it for cereal, oatmeal, putting in coffe or drinking.  I tried it to make a cake glaze and thought it didn't quite taste good (even tried adding rum) and I like coconut.  Ended up tossing it.

When I read the OP's post, I thought that sounds good and I want to try it to cook my oatmeal.  Then upon reading the replies, I decided not to get it.  Thanks for posting re this because that really would be something I would pick up when seeing it.  Will just stick to my original unsweetened almond milk.

I prefer almond milk and not a mix. However put into smoothies or bake with it; things like pancakes, french toast ,muffins . I would make hot chocolate too. I drink the unsweetened version of almond milk ,

I use it for smoothies. Add some yogurt, frozen fruit or fresh, use some ice if using fresh fruit. I like banana with blueberries or strawberries with banana & pineapple or peaches with banana. They have recipes on the Silk brand website.

Darn right it doesn't work with a pudding mix.  I made this mistake once and after several hours in the fridge, the pudding never set.  I ended up making it into a smoothie though and it was delicious.  I went back and read the small print on the pudding box and it said not to use almond milk!  My guess is that it needs lactose (sugar) or perhaps a milk protein to set the mixture.

 

I drink the 60 calorie Almond milk and actually prefer it over skim cow's milk.

I never drink cow's milk or eat cereal or oatmeal, and I seldom bake, but the smoothie thing is a great idea. Maybe just the frozen berries and almond/coconut milk alone? Or with some added protein powder? That sounds yummy, and I'm not even a smoothie junkie.

 

Anybody know if I can use it to substitute for milk in soups, sauces, mac and cheese, things like that?

@KaySD  It wouldn't thicken right in soups, sauces or mac and cheese plus the coconut milk in it would not taste right in those anyway.

I find the taste of almonds or coconut to be very subtle and not even noticeable when combined with other foods.   I don't notice it at all with oatmeal,  for instance.   They say it can be used in soups and sauces but I haven't tried it, however I don't think taste would be an issue.   You always use some agent than milk as a thickener.
