A friend told me about this cut of steak, and now its all I buy. I like to get a cast iron skillet screaming hot, the put in the steaks. Don't try to turn it over until its ready. It will release when its ready. Then put it in a hot oven for a few minutes. Serve with a baked potato/sour cream and butter. I cook my steaks to med. rare. I like to sprinkle on a little salt, pepper and garlic powder on my steak. A lot cheaper than a rib eye and just as good to me. give them a try. They go for $5.49 a pound at my store, sometimes they are on sale and I stock up. There are usually 2 steaks in a pack. We can eat 2 steaks for $6.20.
