I would bet that the "use by" date is several days (at least) longer than the "sell by" date. Of course freshness is a factor, but grocery stores continually get in new produce and meat products, so they want to move/sell what they already have. It doesn't mean that the chicken is going to be inedible one day after the sell-by date. As long as it's been refrigerated I wouldn't hesitate to use it.

I've cooked fresh chicken up to 2-3 weeks max beyond the sell by date without any G.I. issues. Same when I serve chicken to my guests. No reported ill effects.
I remove the skin first, use plenty of seasoning, herbs, garlic, onions then smother the chicken in some kind of sauce. Asian, Mexican, Italian, or Cajun prep is best.
Give it a try next time you have a chicken in the frig for awhile..
