I do understand what the OP is saying. Anyone demonstrating a cooking or food prep item, and any cook teaching a class should demonstrate hygiene by example. Clean hands & fingernails are part of that. I stopped watching New Jewish Cuisine years on PBS because Chef Jeff Nathan was so disgustingly unsanitary. He constantly dipped his fingers into foods then licked them to taste things, handled raw meats, and never once washed his hands. I can't believe he would dare to be so unsanitary in his own restaurant. If so, his kitchen should be shut down.

I have never seen his fingernails dirty or I of all people would have seen them. I am a stickler about that. Some food may stain his fingers when he works with them and that is why you thought they were dirty. I don't think the Q would allow it.

I have noticed that some presenters have the fake tanner around their fingernails built up, and it looks kind of unnatural...

It's not a restaurant, it's a show selling products.

NOTHING is a bad as Wolfgang Puck as he cooks on HSN!! He does disgusting things on air and even tho I don't ever buy and don't watch anymore, its awful to watch. He snorts and coughs into a cloth and then uses the same cloth to wipe down the plates. Makes me shudder. Tastes things he cooks and then uses the same spoon to stir other things. Now I know none of that food gets sent to the customers but ....gross!!! Do we really know what goes on in any restaurant kitchen? I'm sure NO ONE would go out to dinner if they did. I don't!!!

So true! I watched someone wearing gloves supposedly as a hygienic precaution, then continually push her hair aside, and then handle the food, DISGUSTING!

I noticed also! At first I thought, "wow, his nails are kinda long..." and then saw some dirt under one of them. If the camera is going to be that close to your nails, they need to be impeccable. And I generally really like Chef Tony.

Everyone handling food even on tv should wear latex gloves and a hair net or cap to ensure the food is kept clean from germs, bacteria, and hair, especially since many people eat the edible prepared food after the televised shows.

As for Tony's nails if he does wood working and uses stains, it is possible he does not wear protective gloves so the stain can soak in under the nails and that is really difficult to remove, but again wearing latex gloves would be best so nothing can come in contact with the hands, and the food being prepared.
