The crisp skin is the best part of any turkey or chicken.  I usually strip the bird before serving, and cut it up in the kitchen.  There's just DH and me for this year, and he hates the skin.  I will be in 7th heaven tomorrow.  No, its not healthy, but its just once or twice a year for turkey.

How can it possibly go wrong!!?


My mom always used one of my dad's old, worn out white dress shirts (sleeves and buttons removed).  She'd butter the turkey really well and cover it with the shirt. The skin was beautifully browned, glossy and crisp, while the meat remained tender and juicy.  I've used cheesecloth for years for a similar result. 


i saw on tv this morning where they used a men's white undershirt!!

It's in the oven, and I saturated the cheesecloth with butter, and even added extra on the top. I'll just be watching it throughout the cooking, making sure to moisten -- baste - the turkey, and seeing if the cheesecloth is still loosely on there.

I have no idea, @Harpa, but my mom did it every Thanksgiving.  I hope you dinner turned out good.  I did bundle my stuffing in cheesecloth.  It worked like a charm and I plan to continue that new hack.

The turkey got raves! Even from the grandchildren! It was very moist and flavorful! The cloth never stuck to the turkey because I basted it every half hour, and lifted a corner to make sure it wasn't sticking.

 

Nice & brown. The only thing is that the skin never really crisped.

 

Is that the deal with the cloth? That it browns evenly?
