I was a food preservation specialist when I was working. You need 1/2 in head space to be safe. Anyone just learning I highly suggest you contact your local Extension office, listed for your County Government or check with your State University for help. You can also get help from the USDA food safety website. You can also use the Ball Blue Book for recipes and guidance. Unfortunately, the jars shown are not safe for storage. Too much space for bacteria to grow. If you live at a high altitude, you must adjust your time during the water bath or pressure canning methods. Please research and be safe.

I froze flatten bags of applesauce--seemed to work well for me. Never had space for jars but did in my freezer.
