Has anyone done this? I have too much and don't want it to go bad. Will the consistency and taste be the same once it's thawed from the freezer?

You can freeze it but the texture will change. You won't be able to use it sliced in a caprese salad but if you want to add it to pizza or in a casserole it should be fine. It will shred easier when frozen too.
