Back in the day when cans didn't have that white colored liner, they did but what about now, is the white liner thing bad for you? Thanks

I wouldn't bake in that.

I think that white lining is some sort of plastic that was developed to keep acidic foods from interacting with the metal can, isn't it?

I wouldn't because that white lining is BPA plastic. All canned goods are still lined with plastic that contains BPA. BPA makes the plastic more malleable so it conforms better. The plastic helps increase the longevity of anything canned. That way it isn't reacting with the metal as @x Hedge said.

As of 2016, that was not true. In 2016 (when this list was compiled), about 30% of cans were BPA free. The list is given here:

Many, many years ago in high school home ec. we made bread in a can.  (I think it was banana bread or that type of bread. )
