I love vanilla cake with white frosting but I'm kind of sick of jazzing up a white cake mix. Do you like vanilla sponge cake and do you frost it like a regular white cake mix? Anyone have a recipe they want to share?

If you ever ate angel food cake, you had sponge cake. It is white, but it is not what is thought of as classic white cake. It is more airy than packy.

I was watching an episode of America's Test Kitchen a couple of weeks ago. Bridget made a Raspberry Charlotte. It looked so good, and thought I'd like to try that if I had the proper equipment to do it. Sponge has a finer crumb and is moister than a butter cake. It's also not nearly as airy as an angel food cake is.

Angel food cake is technically a type of sponge cake in that it relies on air incorporation for leavening. But it's not what most people call sponge cake which is a different process to make and includes both egg whites and egg yolks of which the yolks are heated over a bain marie and then beaten. They don't really have the same texture either.

A Hostess Twinkie is made from sponge cake. That's the only example I could think of that would be well known.

Angel food is often referred to as sponge cake. The difference is minutia.

I believe those little packages of round strawberry short cake cups they sell in the produce department are also "sponge". If you Google, there are plenty of recipes................

Ever eat a jelly roll? That is sponge cake!
You separate 4 eggs and add to the batter. makes the cake moist and airier than layer cake.
